They're taking DeviantArt/Bowlroll/Nicovideo/Billibilli models and then tweaking them/replacing clothing. You need to edit alot of values so it can become compatible also yes you can bypass the poly limit easily at that but true builder will go though the time to lower it in blender its not that hard to do but is time consuming. As far as animation and hand gestures sorry don't work as a drag and drop enless you want errors to be shown when you use smaller or overall diffrient avatars. If you want to be tilted to think the other way all good for you. then you would be wrong their are plenty that make original avatars a little bit of time on twitch will show you that. I dont think theres a single "artist" out there for vrchat that has original content.
